TAIPEI (Taiwan News) — Aufglet, the Seoul-founded brand renowned for its monochrome visual aesthetic and viral croffles, is expanding its footprint in Taiwan with a brand-new nightlife concept.
Following the debut of its first overseas location in Taipei earlier this year, the brand announced it will officially launch its evening service, "Aufglet Taipei By Night," starting Aug. 21.
In a rare move for an international dining brand, Taipei will unveil the exclusive dinner menu ahead of Aufglet’s five flagship locations in Seoul.
Crafted directly by the Korean headquarters team, the elevated evening menu merges distinct Korean flavors with refined Western culinary techniques to deliver a fresh option for Taipei's late-night dining scene.
The inaugural dinner lineup was developed under the leadership of Korean Chef Minjae Kim, whose resume includes stints at Michelin-starred Jungsik New York and acclaimed dining venues in Seoul.
Grounded in the philosophy of "Western infused with a Korean touch," the culinary team builds on a Western fine-dining foundation while weaving in traditional Korean ferments, herbs, and marinades.
As the first outpost globally to unlock an evening program, Aufglet Taipei aims to transform its daytime cafe atmosphere into an intimate, urban bistro offering an approachable a la carte menu.

Starters set a playful tone, reimagining classic dishes through a Korean lens. The Korean beef tartare pairs raw beef with galbi marinade and mayonnaise, topped with a rich egg yolk and served alongside toasted baguette slices.
Even casual bites get an upgrade: crispy french fries come tossed with maple bacon bits and served with house-made Korean chili ketchup and perilla mayonnaise.
For main courses, Italian risotto serves as the canvas for bold Korean flavor profiles. The Korean seafood risotto features a medley of clams, octopus, and scallops steeped in a spicy gochujang emulsion, while the mushroom risotto relies on savory Korean soybean paste and perilla pesto for a comforting richness.

Land and sea offerings highlight refined cross-cultural technique. Seafood highlights include seared salmon fillet with Japanese parsley sauce, as well as pan-seared fish draped in a velvety French beurre blanc infused with sea-laver oil and white asparagus.
On the meat menu, local Taiwanese Kavalan pork chops are paired with fresh apples and savory anchovies, while a tender sirloin steak is elevated with a light, gochujang-infused butter foam.
The dessert and beverage offerings continue the brand's signature flair. Beyond a trendy Dubai chocolate mousse with vanilla ice cream, the menu spotlights Aufglet's iconic crispy croffle topped with rich matcha ice cream.
Aufglet Taipei’s evening service will operate exclusively on Friday and Saturday nights beginning Aug. 21.
