TAIPEI (Taiwan News) — Regent Taipei has announced an exclusive pop-up partnership with Blanca, a Tokyo-based dessert brand known for its Basque cheesecakes.
Through May 31, the hotel will host the brand’s overseas debut, featuring Basque cheesecakes, artisanal puddings, and “burnt galettes” that sold 50,000 units during a six-month residency at Tokyo’s Azabudai Hills.
Blanca has distinguished itself in Japan’s pastry market through a signature “char as flavor” philosophy.
Each cake is handcrafted to ensure a specific level of caramelization on the surface, releasing a deep aroma that balances the rich interior.
The brand was founded by Azuma Tetsuo, chef-owner of Aca’, a one-Michelin-starred establishment regarded as one of Japan’s leading Spanish restaurants.
Originally served as the finale to meals at Aca’, the cheesecake’s reputation grew, and Azuma launched Blanca as a dedicated online boutique. It quickly earned the nickname “the phantom dessert” because of how difficult it is to secure an order in Japan.

The pop-up’s centerpiece is the classic Basque cheesecake, made with premium Hokkaido cheese. The cake features a dark, caramelized exterior and a silky, molten core.
Azuma recommends two ways to serve it: chilled for a creamy texture, or frozen for two hours for a consistency similar to ice cream.
The menu also includes the poquito Basque trio, a set of mini cakes that allows guests to sample different flavors.
The trio features Kyoto Ippodo matcha, salted caramel, and a Taiwan-exclusive rosa strawberry flavor that blends white chocolate with fruit notes.

Another item is the Blanca pudding, crafted using a double-bake method that balances silky egg custard with a bitter caramel finish.
The burnt galettes, available for takeout at the Regent gift shop, are double-baked for a crisp outer edge and tender center.
The galettes are offered in a classic sugar butter version and a savory prosciutto and cheese option.
