TAIPEI (Taiwan News) — Five-star hotel Le Meridien Taipei’s bistro, Tipsy Sparrow, has launched a weekend brunch menu inspired by the healthy, diverse flavors of California.
Influenced by Mexican and Asian immigrant cultures, the menu targets health-conscious diners with a focus on fresh ingredients and bold spices.
The "West Coast Sunshine" brunch was conceptualized by culinary director and Michelin-starred chef Paul Lee (李皞) and chef Chiu Yi-cheng (邱奕承). Drawing from the laid-back rhythm of the American West Coast, the duo introduced six exclusive dishes starting at NT$320 (US$10).
California cuisine is known for blending Mediterranean produce and coastal seafood with global influences. Tipsy Sparrow’s a la carte selection reflects this mix, ranging from light salads to hearty steaks.
The fried chicken and waffles is a major highlight, reflecting the creative fusion of California’s street culture. This take features deboned chicken seasoned with Korean spices and stuffed with a pork filling, then tossed in buffalo sauce.
Paired with fresh waffles and maple syrup, it offers a blend of American zest and Korean aromatics.

Light fare includes the Parma ham and egg croissant, which layers prosciutto with scrambled eggs on a croissant. The smoked salmon and fried shrimp muffin offers a coastal start to the morning, served with avocado spread and a crispy shrimp patty.
For an indulgent choice, the steak and potato eggs feature a classic American cut with a sunny-side-up egg, while guests can upgrade to a filet mignon for an additional NT$600. The Indian tandoori lamb with turmeric rice highlights the region’s diverse immigrant influences, featuring spice-rubbed lamb chops over turmeric rice.
To complete the brunch experience, a free-flow drink package is available for NT$980 per person. The selection includes mimosas — chilled orange juice and champagne — and bloody marys made with a tequila base, tomato juice, and Tabasco.
