TAIPEI (Taiwan News) — Taylor Butchery has entered Taipei’s upscale meat scene, bringing new offerings to the city’s premium retail market.
The shop offers premium cuts, including Australian full-blood wagyu beef and American Natural Beef. Unlike traditional restaurants, Taylor Butchery operates as a retail meat shop, focusing on customized service tailored to individual customer preferences.
Customers can specify their desired texture or intended cooking methods to receive advice accordingly. The store shared with Taiwan News examples of requests such as thinly sliced sukiyaki cuts or minced meat prepared for infants.
Among the shop’s standout services is a free meat tasting, available by appointment. After selecting their meat, customers can enjoy it cooked by the store manager at no additional cost — an opportunity to sample top-tier cuts prepared with professional skill.
Another distinctive feature is the aging wall, which consists of three large refrigerators. Beef is aged using an oil-sealing method involving thick layers of beef tallow.
This aging process is said to produce a smoother texture and juicier flavor compared to standard dry or wet aging methods, while also reducing meat loss.

Beyond premium offerings, Taylor Butchery stocks more approachable items such as Korean marinated bone-in short ribs and US Choice beef chuck burger patties to appeal to a wider customer base. While the shop primarily targets consumers aged 30 and above, it has seen a growing interest from younger shoppers.
