TAIPEI (Taiwan News) — Taiwan International Cooperation and Development Foundation organized a vegetable cooking competition for Marshall Islands elementary school students to mark the nation’s education week.
Twenty-four students from six schools participated in the cook-off on Feb. 24. The students used produce cultivated with the help of Taiwan ICDF, including eggplants, bok choy, cherry tomatoes, and water spinach, according to the foundation.
Participants also gave presentations about cooking techniques and the importance of a balanced diet.
Natalie Nimmer, an education specialist from the Marshall Islands Ministry of Education praised the event: "We are deeply grateful for the creativity and support of the Taiwan technical team. They are helping students develop lifelong skills and gain a deeper understanding of nutritious local foods."
Taiwan ICDF Deputy Secretary-General Hsieh Pei-fen (謝佩芬) said this was the first time students participated in a cooking competition and hoped healthy eating could take root at an early age through fun and engaging activities.
Since 2021, Taiwan ICDF has been implementing a nutrition promotion program in the Pacific Island country. Initiatives include building school gardens and improving school meal preparation facilities.
The Marshall Islands is one of Taiwan’s 12 diplomatic allies.
