TAIPEI (Taiwan News) — Le Meridien Taipei's Humble House Restaurant will host a special guest Michelin-starred chef event with Run Restaurant on Friday (Oct.18) and Saturday.
Hung Chi-kwong (洪志光), executive chef of the two-Michelin-starred Run Restaurant at Hong Kong's St. Regis Hotel, will collaborate with Tse Kam-chung (謝錦松), Cantonese cuisine consultant for the Humble House Group, and Wu Ming-ru (吳銘儒), Humble House Restaurant executive chef.
Hung, with over 35 years of experience in Cantonese cuisine, led Run Restaurant to earn two Michelin stars in 2023 and 2024. Michelin has praised Hung for his traditional techniques, use of high-quality ingredients, and ability to adapt his dishes to seasonal changes.
The chefs will create a Cantonese meal blending traditional techniques with modern creativity. Hung will incorporate international ingredients like French Gillardeau oysters and Thai butterfly pea flowers into Cantonese dishes.
Signature dishes include "Diced A5 Wagyu Beef Puff" for lunch and "Smoked Braised Duck Liver Buns" for dinner. Other highlights are "Whole Coconut with Seaweed and Abalone" and "Soy Sauce King Cognac Lobster Tail."
The visually striking “Steamed Scallop Dumpling” is wrapped in a blue dumpling skin made from butterfly pea flowers, enclosing scallops, lily bulbs, and shrimp.
The collaboration also features dishes like "Old Radish Fish Soup with Fresh Yellow Mushroom and Seven-Star Grouper," blending Taiwanese ingredients with Cantonese flavors.
The dessert, "Coconut Jelly Guava Puree" features sweet Taiwanese pink guava, creating a refreshing and delightful end to the meal.
