"American cuisine comprises a diverse range of regional specialties. For this particular occasion, I have selected signature dishes from the North East, South and the South West to be presented to our guests here in Taiwan," said Chef Ansted, who is a native of Florida, United States.
Chef Ansted focuses on Cajun specialties, particularly from New Orleans, Louisiana, for his southern cuisine roster. With an eclectic mix of elements from French, African and Native American cuisine, Cajun cuisine is known for its use of rice, crabs, oysters, shrimps and spice blends, including cayenne pepper, dried onions and garlic, parsley and black pepper.
Signature dishes will include Seafood Gumbo, which is a thick, flavorful seafood soup with rice, Rice Jambalaya, considered the paella of the American South, and Fried Okra.
