(Makes 2 servings)
8 large kumquats, sliced, seeded
2 teaspoons sugar
6 mint leaves
Juice of 1 large lime
1/2 cup light rum
1 to 2 cups crushed ice
1/2 cup club soda
2 sticks (8 inches long) sugar cane, optional
Reserve 4 kumquat slices for garnish. Place remaining fruit slices in a large cocktail shaker. Add the sugar, 4 of the mint leaves and lime juice.
Crush the kumquats and mint into the sugar with a bar mallet or large spoon until sugar dissolves.
Pour in the rum; shake well. Fill two tall glasses with crushed ice; strain mojito over ice. Fill the glasses with club soda; stir lightly. Garnish with remaining mint leaves, kumquat slices and sugar cane.

PORK TENDERLOIN WITH GINGER MAYONNAISE AND KUMQUATS
(Makes 8 servings)
2 tablespoons olive oil
2 pork tenderloins, about 8 ounces each
1 tablespoon sugar
1 teaspoon salt
Freshly ground pepper
1 cup mayonnaise
1 piece (2 inches long) ginger root, grated
1 tablespoon lime juice
1/2 teaspoon salt
1/8 teaspoon freshly ground pepper
2 sprigs fresh thyme
2 cups water
1 cup sugar
1 teaspoon whole peppercorns
1/4 teaspoon salt
1/2 pound fresh kumquats, halved
1. Heat the oven to 375 degrees Fahrenheit. Heat oil in large oven-safe skillet over medium-high heat; sprinkle tenderloins with the sugar, salt and pepper to taste; sear on all sides in the skillet. Transfer to the oven; cook until meat registers 160 degrees, about 12-15 minutes. Set aside to rest.
2. Meanwhile, combine the mayonnaise, ginger, lime juice, salt and pepper to taste in a small bowl; set aside.
3. For kumquats, heat the thyme, water, sugar, peppercorns and salt to a boil in a medium saucepan; add kumquats. Reduce to a simmer. Cook 5 minutes; set aside. Spoon ginger mayonnaise on a platter. Slice the pork; arrange over mayonnaise. Spoon kumquats over pork.
