Japanese celebrates life events and festive occasions with luck-summoning seafood. This winter, Hotel Royal-Nikko Taipei’s Nakayama Japanese Restaurant features Hokkaido-imported rockfish known as Kichiji, which shares the same pronunciation as “auspicious event” in Japanese.

Captured by single-hook fishing, this deep-sea vermillion red delicacy is valued for its rarity as well as its plump and fatty texture. The unadulterated umami taste of Kichiji is elicited by simple culinary ingredient and technique, in particular salt grill, soy sauce flavoring and hot pot.

The dish will be available until December 31, 2015.
