New book offers healthy recipes specifically for seniors

Taipei, Oct. 7 (CNA) A local charity on Wednesday launched the first cookbook in Taiwan that caters to the needs of senior citizens who have problems chewing hard foods or swallowing. The book is aimed at helping people prepare healthy, delicious meals for seniors, said the Taipei-based Eden Social Welfare Foundation (?????????). As they age, many senior citizens have difficulty chewing certain foods or swallowing, which means they can eat only soft or mashed foods, the foundation said. In an effort to promote healthy eating among such seniors, the foundation decided to produce the book, titled "Live Long, Eat Well," which contains 65 recipes that include breakfast dishes, appetizers, noodle dishes, soups and desserts. The recipes were devised by four chefs who worked together to come up with dishes such as a version of Taiwan's signature braised pork rice that uses mashed potatoes instead of rice, the foundation said. Liquor-soaked chicken, the most popular dish for residents at Eden's care center for the disable in Keelung, is also featured in the book, the foundation said. It was devised by chef Shen Hsueh-chen (???), who has worked at the center for 15 years, it added. "I used to run a business just to make money, but now I cook meals for the residents at the center, with a love for families," Shen said. The book contains not just recipes but also tips on creating a pleasant dining environment for seniors and choosing suitable tableware, the foundation said. The first of its kind in Taiwan, the book will become available in bookstores around the country and in online stores later this month, it said. (By Elaine Hou)
