Lan Ting offers gourmet seafood

Abalone and shark fin are considered the most precious kinds of seafood in the culinary world, and prawns are the best kind of shrimp to eat. In every banquet at Lan Ting, these ingredients are undoubtedly the stars of the show and therefore the forte of the restaurant's five-star chefs. Now, in order to allow consumers to easily savor the chef's wonderful creations even at lunchtime, Executive Chef Baibi Tsai has utilized the above-described ingredients into a new series of hefty five-course Lunch Menus that are bound to make guests happy.
Shark Fin Set Luncheon
Braised Shark Fin Rice is the entree for this set, with handpicked hooked shark fin and Chi Shang Champion Rice as the main ingredients. The preparation process for shark fin is quite complicated, involving steaming for half an hour followed by a whole night of simmering, then carefully picking out all unwanted parts and cleansing for 12 hours before finally putting it into a pot with hen, pork skin, and cooking wine to be boiled for 8 to 10 hours. The pork skin has the effect of thickening the shark fun and adding texture and the wine for removing fishiness. After the long hours, the soup is completely dumped out, the fin braised for another half hour with superior broth before finally serving it over a bed of fragrant fried rice with salted fish for the ultimate dish.
"The broth is also another significant part of this dish," says Executive Chef Tsai. "The broth is made from quality hen, select ham, and premium pork braised for ten hours so that it can have a thick and rich flavor and a golden color that makes the mouth water just by looking at it."
Abalone Set Luncheon
Abalone Vermicelli is the main course here, with fresh live abalones imported from the southern water regions of Australia. The lips of these abalones are a deep brown color with a tender and full flavor due to long period of absorbing the abundant minerals in the seawater. Our chef takes these abalones with sizes about half of the palm of a hand, cleanses them and steamed them in a garlic paste. They are then placed atop a plate of vermicelli stir-fried with yummy egg and black pepper and wrapped in a tofu skin. Drizzle on a special sauce made with garlic, chili, and wine and a refreshing dish perfect for the summer emerges.
Prawn Set Luncheon
Coconut Curry Prawn is the main feature of this set. Gigantic prawns from the deep seas f Peng Hu are carefully selected from a large batch so that only the best ones, close to 20cm in length and 100g in weight, are used in the dish. These prawns have a firm and supple texture that emanates a unique savory and sweetness together when chewed; its creamy paste is more luscious than any shrimp. The prawns are cleansed, deep-fried, and then stir-fried with red curry and coconut milk for a vibrantly red topping over a plate of yummy I-fu noodles. One bite of this dish and you will be transported to the exotic islands of south Pacific.
